BBQ Chicken

Tyler hates barbecue sauce.  He also dislikes marinara and most sauces in general that have a tomato base.  We rarely have spaghetti or lasagna and he would freak if I made ham balls.

So while I was off last week and he was on his week-long hunting extravaganza, I made barbecue chicken in the crock pot.  It made a ton…and I ate a ton and gave some away too.  It was just so easy to make a variety of meals with, that it really never got boring.

First meal was the classic barbecue chicken sandwich with some edamame I grew this past summer.

Then BBQ chicken quesadillas with caramelized onions, mozzarella and some spinach to give it some color.

And a few rounds of this one, as it was my fav of the three meals.  BBQ chicken tortilla pizza on a whole grain tortilla with chopped green peppers and mozzarella and cheddar cheese.

Crockpot Barbecue Beer Chicken

slightly adapted from How Sweet It Is

3 pounds boneless, skinless chicken breasts (about 6 large)

1 tablespoon onion powder

1 tablespoon paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon pepper

8 ounces of beer (I used a Corona)

21 ounces or more of barbecue sauce (I used Iowa made Countryside Bar B Q Sauce – a thinner sauce is better than a thick one for this recipe)

Season chicken with onion powder, garlic powder, paprika, salt and pepper. Add to crock pot, then add beer and 24 ounces of barbecue sauce. Cook on low for 8 hours, tossing once or twice if desired. After 8 hours, shred and add remaining barbecue sauce. Serve as desired.

As we get into the groove for the new year, this crock pot recipe just might help you out.  Just be sure to serve it with some healthy stuff, can’t break those resolutions yet.
