C is for Carrots

Yes!  My fall crop of carrots are crisp and sweet unlike my earlier bitter-tasting crop that was singed by summer’s intense heat.

Good thing because carrots are good for me…and you!  Here’s the rundown on all the good nutrients they offer.

Fall carrots

The cooler weather made for some beautiful, lush carrot foliage.  Can someone breed a perennial that looks just like carrot tops?  I think carrot foliage would make a great container filler.

Henry loves carrots

I love them too, especially when roasted.

To prep before roasting, peel and wash carrots.  Then coat with olive oil and sprinkle with salt, pepper, and minced garlic.

Roasting carrots

My carrots shared the oven with a roasting chicken breast at a temp of 375 degrees.  I let them roast for about 45 minutes until they were soft and just starting to caramelize.  I’m telling you caramelized carrots are flippin’ amazing.  Want the best carrot of your life?  Make this recipe.
