Start Somewhere

Tomorrow (Friday) at noon in Iowa is the Start Somewhere Walk – a 1K walk that Iowan’s all over the state will do as part of the Healthiest State Initiative.

I encourage all you fellow Iowan’s to get up off your tushes tomorrow and hit the pavement, grass, stairs, or wherever and put in at least a 1K.  I’ll be at work, but plan to walk a short while over my lunch hour.  I also participated in a pilot Start Somewhere Walk in early September and was amazed at the community support for this initiative.  I can’t wait to see what other events come about from this very important effort.

And non-Iowans…please join us.  Here’s to everyone’s health! 🙂

One thing that is super important–if not the most important– in living a healthy life, is our diets.   Eating healthy keeps our bodies functioning properly and helps fight off disease.  I realize it’s not the easiest thing to have a good diet.  I definitely can’t deny that I eat Doritos from time to time or eat sweets with real butter and lots of sugar.  But it’s important to try….and start somewhere.

One of my recent favorites for ‘health’ food is quinoa.  This stuff is sooo good, and I’ve actually already raved about it here.  I just wanted to share with you my latest quinoa recipe that I made along side the Salmon and Roasted Cherry Tomatoes (<—- healthy too!)  last week.

Quinoa and salmon

Sautéed Mushroom Quinoa Salad

1/2 onion, chopped

2 celery stalks, chopped

3/4 C quinoa

1 1/2 C chicken broth

8 0z white mushrooms, sliced

1 clove garlic, minced

Goat cheese

Fresh parsley

Saute onions and celery in a little bit of olive oil over medium heat until softened.  Add quinoa and broth and bring to a boil.  Then reduce heat and let simmer 15 minutes or until quinoa is fluffy and liquid is absorbed.

Meanwhile saute sliced mushrooms in olive oil over medium heat, stirring frequently.  Add garlic and cook until mushrooms are a darker brown color. Stir mushrooms into quinoa mixture.

Serve with a sprinkle of fresh parsley and goat cheese.
