blt + corn = pizza

Big plans for the weekend?  Not too much for me…teaching yoga Saturday a.m. and then a wedding later on and hopefully a half relax, half productive Sunday. 

Whatever your plans may be I suggest you grab a 6-pack (or 12 if you have outstanding drinking tolerance), preferably a local/regional brew and make a pizza. 

But not just any pizza.  This pizza.

BLT & Grilled Corn pizza

The main ingredients.

Bacon, tomato, sweet corn

Yep that’s bacon, tomato and sweet corn – staples in a summer meal.  And yep it goes on the pizza.  And yep totally works and is incredible.

BLT & Sweet Corn Pizza

Favorite dough or pre-made crust

6 slices of bacon, cooked until crisp

1 medium tomato, sliced thin

1 cup romaine lettuce, chopped

3 ears sweet corn, grilled

1 1/2 C Mozzarella cheese, shredded or sliced  – or as little or much you prefer

Pizza on grill

Fry or bake your bacon until just crisp.  Remove husks from corn and grill until lightly charred on all sides.  Let cool and then slice corn of the cob.

Prepare your crust into two small-sized pizzas.  Brush one side with olive oil and place that side on a hot grill.  Cook until slightly crisp and pizza is stiff and easy to flip over with tongs.  Brush top side with oil and then flip.

Immediately layer on cheese and top with bacon slices torn in half or thirds, tomato slices and grilled corn.  Close lid and let cook until bottom crust is done and cheese is melted.

Remove pizza from heat and top with chopped romaine lettuce and enjoy!
