Malibu Melon

Friday!  Not much can beat a Friday night, especially in the summertime when you can kick back outside and enjoy the fresh air and couple days of freedom ahead. 

And if you’re like me kickin’ back must include an adult beverage (or two). 

Most often my choice is a vodka or gin & tonic or a beer like Stella Artois, Leiny’s Summer Shandy or any kind of wheat brew.  I always skip the really sweet mixed drinks (my margarita’s got to be sour) and I’m not much of a soda fan so that’s never a mixer option either.

But once in a while a sweet drink craving will come up and after going to Jamaica in 2010 (and hopefully again in 2012), I realized if you want a sweet drink —> use real fruit!

So remember that double melon?  You know…the butt.

Well I used one of those ‘cheeks’ to blend up a pretty refreshing and kind of sweet drink.

Malibu Melon

makes 3 tall-sized drinks

2 C juice from blended muskmelon

Juice from 1/2 lime

3 shots Malibu rum

1 shot orange-flavored liqueur

Large handful of ice

Cut one half of a muskmelon into chunks and throw into the blender making 2 cups of melon juice.  Add in lime, rum, orange liqueur and ice and blend until smooth.

No need to add sugar as the melon and the alcohol have plenty of great sweet flavors already.  Serve in a chilled glass and garnish with some lime.

And kick back and enjoy your Friday night drink.
