Salad City

Every year I plant lots of greens in the spring.  Mixed greens, spinach, leafy lettuce, bibb…you name it.  And every June it turns into salad city in the garden.  It’s usually a challenge to keep up on eating the lush crop of greens between two of us.  And it can be real hard not to get sick of eating a dang salad all the time. 

Tonight I made an awesome Steak & Berry Salad to help change it up a bit – using fresh greens, red onions, basil, oregano and chives from my garden. 

For the steak I adapted our all time favorite marinade (usually used on pork) on a beef sirloin tip cut (a flank cut would work well too).


3 T olive oil

2 T  balsamic vinegar

2 cloves garlic, minced

1 T fresh basil, chopped

1 T fresh chives, chopped

1 tsp chili powder

1 tsp fresh oregano, chopped

salt & pepper

Put in a plastic bag with steak and marinate a couple of hours or more.  Then throw on the grill and cook to your preference.  Now it’s time to assemble the salad.


Plate of fresh greens of your choice (I had a mixed variety, slobolt, & spinach)

Strawberries, quartered

Raspberries, whole

Red onion, sliced thin

Steak, sliced thin

Feta cheese, crumbled

Balsamic vinaigrette (1 T balsamic vinegar, 3 T olive oil, 1 tsp Dijon mustard, S&P = 2 servings)

I think I woofed it down in 30 seconds.  Perfect summer salad.  Filling and light…and no greens getting wilty in the fridge.  Thumbs up!
